Marinated Peppers
Ingredients
2 Red Bell Peppers
2 Green Peppers
2 Yellow Peppers
2 Garlic Cloves, chopped
2 Tbsp balsamic Vinegar
1/2 cup extra virgin olive oil
1 tsp fresh basil, chopped
1 tsp fresh parsley
salt and pepper to taste
Instructions
Serve with loaf of Italian Bread
1. Roast whole peppers in oven at 450 for 10-15 minutes until skin blackens. Put Peppers to a pan, seal with plastic wrap and allow to cool.
2. Remove skins and seeds from cooled peppers. Slice into strips. Season peppers with olive oil, vinegar, parley, basil, garlic, salt and pepper.
3. Drizzle bread with extra virgin olive oil. Grill bread on both sides.
4. Serve peppers with grilled bread.
